Why Meal Prep?
Meal prepping has become rather popular in recent years, with the intricate detailing of bento-boxes and increasing awareness of food waste making lunchboxes cool again. It entails preparing your meals in advance to ensure you have numerous well-balanced meals to look forward to throughout the week. Although traditionally done for lunch, breakfast planning is a great habit to get into!
Here's a simple idea...
Breakfast burritos are the perfect breakfast food; they can have as much or as little as you want, and can contain a multitude of items! Self-contained in a tortilla wrap, they can be eaten hot or cold - the perfect portable food! Take some inspiration from the following items (makes around 4 burritos):
4-egg scrambled egg made how you like it
1/2 can of kidney beans, drained and cooked
3 sausages, cooked and sliced into thin strips
2 large potatoes, cut into small cubes, seasoned with herbs (paprika, chilli powder, garlic powder, pepper) fried until crispy
4 tortillas of your choice
100g quinoa or brown rice (seasoned)
2 handfuls of spinach
1 handful of shredded cheese
Pile it up in a wrap, and seal it in with tinfoil. Either keep it in the fridge or freeze them (remember to let food cool before refrigerating!).
TOP TIP: use a marker pen to write your ingredients and the date you made it on the foil to keep your fridge/freezer organised!
