One Pot Taco Pasta – a simple, tasty recipe cooked in one pan!

Ingredients

  • 500g lean beef mince
  • Cooking oil
  • 2 cloves of garlic, minced
  • 2 peppers, diced
  • 180ml passata
  • 130g sweetcorn
  • 200g pasta
  • 500ml beef stock
  • 3 tbsp of light cream cheese
  • 60g grated cheese

For seasoning

  • 1.5 tsp cumin
  • 1.5 tsp paprika
  • 1.5 tsp chilli powder
  • 0.5 tsp oregano
  • 0.25 garlic and onion powder

Method

  • Add the beef to a deep frying pan over a medium-high heat
  • Cook until browned, then add in all the seasoning ingredients, remove and set aside
  • Add the onion, garlic and pepper to the pan and fry for a couple of minutes to soften
  • Add the beef back in along with passata and corn and stir till coated
  • Add the uncooked pasta and stock
  • Turn up the heat to bring to a boil, then reduce a little and simmer till the pasta is cooked. Around 12 min
  • When the pasta is cooked add in the cream cheese and grated cheese and mix until melted.
  • Viola – enjoy!
